The Broadmoor, a Forbes Five-Star, AAA Five-Diamond resort, announced that Restaurant 1858, the resort�s newest dining experience at the base of Seven Falls, has opened on August 13, 2015. Taking its name from the Gold Rush era and the famous motto, �Pikes Peak or Bust� of that time, Restaurant 1858 offers uniquely Colorado cuisine and seats approximately 100 guests in the restaurant�s main dining room and in additional outside seating and at the bar.

Executive Sous Chef of Broadmoor Restaurants David Patterson and Chef de Cuisine Kathleen Symons oversee a menu that showcases traditional Rocky Mountain flavors and takes its cue from the heritage of the Old West, blending low-country style with early frontier cooking. The menu�s wide array of German, French, and Creole cuisines are inspired by the immigrants who traveled west to seek their fortunes in the gold rush, making Restaurant 1858 the culinary melting pot of Cheyenne Ca�on. Open daily for lunch and dinner, Restaurant 1858 offers a menu that changes seasonally and features many local Colorado growers and ranchers, including Broadmoor Farms, Bio Herbs and More, Arkansas Valley Organic Growers, and others. All seafood featured on the menu is sustainable, as outlined by Monterey Bay Aquarium Seafood Watch, while Colorado-raised meat is served whenever possible. �Restaurant 1858 is a crown jewel in the newly-restored Seven Falls,� says Craig Reed, Director of Food & Beverage. �Local guests and those from out of town will have a unique Colorado dining experience they can remember for a lifetime.� The restaurant�s d�cor features hand-hewn stone and reclaimed barn wood, large wooden beams, hardwood floors, and custom lantern mining inspired light fixtures. "Gold Rush� art from The Broadmoor�s Western Art collection is showcased throughout the restaurant, and is accented with historic photographs of the area from yesteryear. The patio offers guests an opportunity to dine al fresco near the thundering water of the spectacular natural box canyon into which 181 feet of falls tumble. Guests enjoy starters and snacks such as BBQ Colorado Trout Fritters with creamy creole mustard, Roasted Tomato Tortilla Soup with cilantro, avocado and lime; Buttermilk Biscuits & Country Ham with house apple butter, andSmoked Summer Sausage with creamed corn, marinated tomato, and crispy pork rinds. Entr�e selections feature sustainably-raised meats, including the 1858 Mixed Grill with Eagles Nest Ranch quail, bison roast, venison sausage, black pepper roasted garlic spaetzle, and summer pole beans; and Slow Roasted Prime Ribwith roasted potatoes, garden vegetables, and butter popover. Guests enjoy Colorado Rocky Mountain Trout eight different ways, including Cast Iron Classic, trout saut�ed with hickory smoked bacon, brown butter, lemon, and parsley;Prohibition Style, trout in a bourbon and honey glaze with almond brown butter; and Back East, trout wrapped in Virginia country ham with grilled brandied peaches. Guests with a sweet tooth are tempted by classic desserts such as Lemon Icebox Pie, Palisade Peach Cobbler, and Grandma�s Chocolate Cake. Seven Falls re-opens to the public on August 13, 2015, the same day as Restaurant 1858. Known as �Colorado�s Grandest Mile of Scenery,� Seven Falls offers a newly restored park, including not only the sights and sounds of the falls but also The Broadmoor Soaring Adventure, a series of two unique zip-line courses situated on 1,400 acres adjacent to the park.
